Indian gravy is the base used for majority of Indian dishes, akin to tomato or chilly sauce used in other parts of the world. The Indian curries and gravies are the ones that provide a rich flavor and spice to Indian food and make it more rich and enjoyable.
India is a vast country with each region having its own culture, cuisine and food preferences. This reflects in the food and Indian gravy recipes have strong regional variations like South Indian gravy, Punjabi gravy, Gujarati gravy and North Indian gravy etc.
Main ingredients used in Indian curry recipes
Most of the Indian gravies are in general thicker when compared to other gravies in the world. This is on account of addition of one or more of the items like ground onions, tomatoes, green chillies, whole red chillies, coriander seeds etc. Many gravies are also made by adding ground almonds, cashew nuts, malai (cream), yoghurt (curd) etc. to make them more creamy and rich.
The curries are also spicy and flavorful in taste due to the generous use of various ingredients like ginger (adrak), garlic (lahsun), tamarind (imli), curry leaves and one or more of other spices like cumin (jeera), mustard seeds, methi dana (fenugreek seeds), chilli powder, coriander powder, turmeric (haldi), saunf (fennel seeds) etc.
The exact selection of spices for making the gravies for each dish is influenced heavily by the region, tradition, even religious practice, and many times family or individual preference. This gives rise to many varieties of gravy/curry based dishes with different tastes and appeal.
Curries are essential part of an Indian meal
Curries and gravies are an integral part of Indian meals and accompany cooked rice or Indian breads. A complete wholesome meal in India generally consists of a wet curry, a dry sabzi, dal, raita, salad, rice and roti.
Indian gravies go very well with breads like roti, naan, paratha or poori as well as with rice dishes like plain rice, pulao, biryani and fried rice.
