It is spicy and aromatic, made with just salt and 2 spices – red chili powder and asafoetida.

This oil-free and lip-smacking achaar goes well with almost anything. You will definitely love this pickle.
You can store this pickle in the refrigerator for up to a year.

Ingredients

  • 1 kg Raw Mangoes

  • 3/4 tsp Asafoetida (powdered)

  • 1 tsp Red Chilli Powder

  • 5 tsp (or as per taste) Salt

Directions

  • Wash raw mangoes. Pat them dry. Peel mangoes and grate them.
  • Add salt, mix nicely.
  • Cover it with a plate or cloth and leave it overnight.
  • Add hing and red chilli powder in the morning and then keep it in sunlight for one day.
  • After a day stir the mango mixture properly and keep it in a jar.
  • The achaar is ready to be served with poori, paratha, khakhra and mathri etc.
  • Enjoy spicy Kacche Aam Ka Hing Wala Achaar. Keep the jar in the refrigerator.

Notes

  • Use red chilli powder as per your liking. Using Kashmiri lal mirch powder or degi lal mirch adds beautiful colour.
  • The quantity of asafoetida depends on its quality. You should feel its aroma once you add it to raw mangoes.
  • Of course, adjust chillies as per your taste. As it is not a preservative but just for taste.
