INGREDIENTS

FOR ROASTING PANEER:
• 14 cubes paneer /cottage cheese
• ½ tsp ginger garlic paste
• 1 tsp oil
• ¼ cup hung curd / yogurt
• ¼ tsp cumin powder
• ¼ tsp coriander powder
• ½ tsp kashmiri red chilli powder
• ¼ tsp turmeric
• ½ tsp garam masala
• ¼ tsp ajwain / carom seeds
• 1 tsp kasuri methi
• 1 tsp lemon juice
• ¼ tsp salt
• oil for roasting



FOR CURRY:
• 2 tsp oil
• 1 tsp butter
• 1 tsp cumin / jeera
• 1 onion diced
• 1 tsp ginger garlic paste
• ½ capsicum diced
• 1 tsp pav bhaji masala
• ¼ tsp turmeric
• Salt to taste
• ¾ cup tomato puree (To prepare tomato puree, blend 3 ripened tomatoes into a fine paste.)
• 3 tbsp water
• 2 tbsp coriander, finely chopped

Time Needed : 35 minutes

  1. Firstly, in a large mixing bowl take ¼ cup hung curd. Add all the ingrdients mentioned above in the roasting section (except paneer). Mix the spices in the curd and marinate the paneer. Let it rest for 30 minutes. Roast the marinated paneer pieces on hot Kadai adding oil as required. Flip over and roast on all the sides. Keep aside.

  2. On a large Kadai or in a kadai heat 1 tsp butter and 2 tsp oil. Once the oil is hot add 1 tsp cumin and roast until the jeera turns aromatic.

  3. Add 1 onion followed by 1 tsp ginger garlic paste. Saute well.

  4. Also, add ½ capsicum and saute for a minute without overcooking the capsicum and keeping the flame on low add ¼ tsp turmeric, 1 tsp pav bhaji masala and salt. Roast in low flame.

  5. Now add ¾ cup tomato puree and saute well until the tomato puree thickens and oil is released from sides.

  6. Add 3 tbsp water and mix well. Add in roasted paneer pieces and mix gently.

  7. While serving Tawa Paneer Masala, drizzle some lemon juice on top and garnish with coriander leaves. Accompany with some side salad.

  • 2 medium tomatoes
  • 4 red chilies (halved and seeds removed)

  • Heat water in a pan and when the water comes to a boil, add the tomatoes & red chilies in it.
  • Boil the tomatoes on a medium flame for about 7-8 minutes or till the tomatoes start peeling its skin. After this, strain the water and allow the tomatoes and red chilies to cool down.
  • Once cooled down, peel the skin of tomatoes. Now roughly chopp or crush the tomatoes & transfer into a blender along with the red chilli.
  • Now add the black pepper, slat to taste, sugar, garlic to the blender.
  • Add the vinegar & soy sauce (optional).
  • Without adding water, blend this mixture into a to smooth paste.

Momos, dim sums and wontons are different names given to various dumplings which are popular in China, Tibet, Nepal and North Eastern states of India. Slowly these cute little savories have made their way to the other parts of India & hence to Indian’s hearts (and stomachs). Most of the street food vendors you may come across, selling Indian Chinese food, are sure to be selling a variety of momos.

Traditionally, Momos are steamed in bamboo baskets but you can also cook them in a regular steamer or cooker lie idlis.

Ingredients for making Veg Momos

  • Maida – 1/2 cup
  • Oil – 5 tablespoon
  • Salt to taste
  • Water (to prepare the dough)
  • Maida (for rolling)
  • Cabbage – 1 cup (finely chopped)
  • Carrot 3/4 cup (finely chopped)
  • Onion – 1 (finely chopped)
  • Garlic – 2 clove, finely chopped
  • Ginger 1/2″, finely chopped
  • Soy sauce 1 tablespoon
  • Black pepper powder 1/4 tablespoon
  • Salt to taste

Steps for making Veg Momos at home

  • Mix the maida, 1 tsp oil and salt & knead with warm water to make a soft dough. Cover with a wet muslin cloth & keep aside when done.
  • To make the filling, heat 4 tsp oil in a pan and add garlic. Saute for 1-1.5 minutes, add chopped green chilies and ginger and mix well. Add chopped onions and saute for 3-4 minutes on medium heat.
  • Add the carrot and cook for 3-4 minutes. Add the chopped cabbage and cook for 6-8 minutes. Keep stirring in between.
  • Add soy sauce, black pepper powder and salt and mix them well while heating on medium flame for a few more seconds.
  • Now, turn off the heat and allow this mixture to come to room temperature.
  • While the mixture cools, knead the dough again for 1-2 minutes and divide into 12-14 equal sized portions/balls.
  • Roll out each ball into a 4-4.5 inch diameter circle. The circles should be neither too thick nor too thin in thickness.
  • Place 1 tsp of the prepared vegetable filling mixture in the center of each rolled out circle. Do not overstuff the filling.
  • Beginning at any one end of the circle, gather the edges to form pleats in your desired shape and bring the pleats together to form a pouch and seal the end. Do this with all the circles.
  • Steam the Veg Momos in a greased steamer for 7-8 minutes. The Veg Momos are ready when a shiny sheen appears over them.
  • Serve immediately with Veg Momos chutney recipe and mayo. You can also savor them with other dips & sauces as per your liking.
